Hiiii All!

I have been SO MIA for the past few months. I am sorry. I really am. I have taken a lot of me time. Yes, I have gained back about 15 pounds but I am so happy right now! Nathan and I have been working on our relationship and we are happy as ever. I have also found a new job!!!! I Am so so exctied. I am going in to a new accessory store as an assistant manager! So I am very ready to move on from my current company. I have been embracing my curves and I am getting so much more in to fashion! But I plan on getting back in to running slowly but surely! I want to at least exercise more so I still feel healthy! 

Days like today I wish I had friends!

It’s almost as if you can be fulfilled and comfortable with your body no matter how you choose to take care of it. Thank goodness this image isn’t being used in order to somehow shame the people who make a “wrong” dietary choice.

Looked at some of the photos from my day out yesterday and I can’t beleive how far I’ve come! 4st lost, healthy for life achieved. So happy! :D

Zucchini Pizza Boats


  • 6 small zucchini (2 1/2 lbs)
  • 1 Tbsp olive oil
  • 1 clove garlic, finely minced
  • Salt and freshly ground black pepper
  • 1 cup marinara sauce (I used Classico Four Cheese)
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • 1/3 cup finely shredded parmesan cheese (1.4 oz)
  • 1/2 cup mini pepperoni slices
  • 2 Tbsp chopped fresh oregano

Preheat oven to 400 degrees. Line a large rimmed baking sheet with parchment paper or a Silpat liner, set aside.

Cut each zucchini into halves through the length (if they don’t lye flat trim a thin portion from bottoms so that they will lye mostly flat. I only had to do this with one of them).

Pat insides dry with paper towels (cut portion). Align on prepared baking sheet.

In a bowl, stir together olive oil and garlic then brush lightly over tops of zucchini. Sprinkle with salt and pepper to taste then brush a slightly heaping 1 Tbsp marinara sauce over each zucchini, leaving a small rim near edges uncoated.

Sprinkle tops evenly with mozzarella cheese then with parmesan cheese. Top with pepperoni slices (placing them more near centers as the cheese will melt and spread).

Bake in preheated oven 12 - 18 minutes (bake time will vary depending on how thick your zucchini are and how crisp/tender you want them).

Remove from oven and sprinkle with chopped fresh oregano. Serve warm.

Yayyyy. I have officially gained all of the weight I lost back. I am almost back at my starting weight. I am so not happy with myself.

A few weeks ago, I took a trip to visit my grandpa in Pennsylvania. I had an amazing time and Nathan got to meet a lot of my extended family. And then the weekend I got back (this weekend) was my mom’s 40th birthday. I had a ton of family in town. I had unhealthy eating, drinking, junk food and no exercise in several weeks. I am beyond upset with myself.
